Try These 4 Vegan Treats This Valentine's Day

Veganuary got you inspired to whip up some tasty vegan snacks? Well look no further! We've got all the sweet treats you need this February. Whether you're baking with your Valentine, mixing something up for your friends or just treating yourself (you deserve it) there's something for everyone, even if you're committed to your healthy eating resolution!  These are some of our personal favourite recipes we found:

1. Easy Peanut Butter Cookies 

Delicious, chewy cookies that are super easy to make and even easier to eat. (Seriously, it's hard to stop!) You only need 1 mixing bowl, and 1-2 trays to bake them on. Plus they only use household ingredients that are easy to find and cheap to buy. They make the ultimate easy, yet super thoughful gift for a loved one, and are great as a late-night cookie raid snack!

Peanut Butter cookies

Makes 20-24 cookies

Ingredients:

  • Peanut butter 
  • Sugar 
  • Flour 
  • Almond milk 
  • Vanilla 
  • Mineral salt

2. After Dinner Eaton Mess

The perfect (and delicious) end to a home cooked dinner with your partner, friend or family. This dish may require a little more baking experience and prep time than the cookies, but if you're up for a challenge we would seriously recommend this recipe, provided you're okay with eating a lot! Ingredients:

  • Drained liquid from a 400g can chickpeas
  • 100g golden caster sugar
  • 500g mixed berries
  • 2 tbsp icing sugar
  • ½ tbsp rose water
  • 400ml vegan coconut yogurt
  • rose petals for decoration

3. Healthy No-Bake Oatmeal Bites

A healthy energy boost and delicious snack rolled into one, plus it's no bake which means you can prepare it and eat in in minutes! We can't promise you won't become addicted. Full of nutritious goodies and simply scrumptious, it's a win-win.

Ingredients:

  • Whole rolled oats 
  • Flaxseed
  • Roasted almond butter 
  • Maple syrup and Medjool dates 
  • Coconut oil 
  • Vanilla extract and cinnamon
  • Sea salt 
  • Walnuts 
  • Shredded coconut 
  • Mini chocolate chips

4. The Ultimate Chocolate Cake

Craving a chocolate fix? This cake has it all, creamy, thick icing on a rick, moist cake, it's seriously mouth-watering! If you have time to spend and a little baking experience, this cake is perfect activity or gift. Thank us later.

Chocolate cake

Ingredients:

  • Unsweetened almond milk
  • Apple cider vinegar
  • All purpose flour
  • Granulated sugar
  • Cocoa powder
  • Baking powder
  • Baking soda
  • Salt
  • Canola oil OR melted coconut oil
  • Unsweetened applesauce
  • Pure vanilla extract
  • Boiling water

For the frosting:

  • Cocoa powder
  • Vegan butter, softened
  • Powdered sugar
  • Pure vanilla extract
  • Unsweetened almond milk
