Vegan Mother's Day Lunch Ideas
Whether you are a vegan, veggie, just inspired, or even an avid meat-eater, there are some seriously scrummy plant-based meals you can make to show your Mum just how much she means to you. Nothing says 'I love you' quite like a home-cooked meal!
We all know we should cut our meat consumption for the health of the planet and our body but no-one wants to give up delicious food, that is why you don't have to! We compiled a list of our favourite recipes for a special (and tasty!) vegan lunch, with links to all of them. Your Mother's Day treat just got a little easier! Even if you're not a good cook, there is something for everyone on our list.
The Light Lunch: Vegan banh mi

Ingredients:
- Leftover raw veggies , (such as red cabbage and carrots), shredded
- Good-quality vegan white wine vinegar
- Golden caster sugar
- 1 long French baguette
- Hummus
- Cooked tempeh , very finely sliced
- Coriander, leaves picked, to serve
- Mint, leaves picked, to serve
- Hot sauce , to serve (we used sriracha)
This tasty sandwich is the perfect quick lunch for a jam-packed day treating your mum! Filling but not heavy, it's the perfect dish to tide you over until dinner but keep you full an energised for the days activities!
This lunch uses any leftover veggies you might have and so is an excellent way of preventing waste!

The Easy Lunch: Creamy Roasted Tomato and Basil Soup

Ingredients:
- Roma tomatoes
- Grape (or Cherry) tomatoes
- Whole cloves garlic
- Olive oil
- Salt and freshly ground black pepper
- Yellow onion
- Red bell pepper
- Potato
- Tomato paste
- Vegetable broth
- Fresh basil leaves
- Option to add vegan cream
- Serve with a bread of your choosing.
Although not the quickest dish on our recipe ideas, we picked this soup as our easy recipe because it is so hard to go wrong when making soup. All you need to do is cut and prepare the veg and boil it in stock. Simple!

The Healthy Lunch: Lentil Bean Salad
